Dinner tonight was most exciting! Well, I hadn't really eaten anything all day.
I made a really quick and healthy dish...
Can't remember the name of it, but it's Japanese...
This recipe I got off a friend, most of it was from memory. And it turned out amazingly and was most yummy yum!
Ingredients:
500g Chicken Breast, diced roughly
1 onion, diced roughly
3 Bok Choy (I know bok choy isn't Japanese, but I wanted some green)
A hand full of baby spinach
Shitake Mushrooms
Grated ginger (to taste)
Soy sauce (to taste)
400-600ml boiling water (depending on desired consistency)
Chicken stock 1-2 tsp
1-2 eggs (depending on desired consistency
Udon/Soba noodles OR Rice
Method
Heat oil in a pan
Chop the onion and slice the mushrooms, add to heated oil, stir until onion starts to brown
Add chicken stock to water and mix until dissolved, then add water to pan
Add ginger
Add chicken
Whisk eggs, clear a space in pan, add egg wait for egg to cook a little bit then mix through.
Turn to medium heat, allow to simmer and thicken until desired consistency.
Cook rice
Serve
YUM!
I really like having it as more of a noodle soup dish, so I left a lot of liquid in mine, if you want it as more of a creamy dish, add more egg and leave it to simmer for longer.
